Daftmill 15 Year Old Fife Strength 56.3% - Single Malt Scotch Whisky

Daftmill is a farm distillery. Owned and operated by the Cuthbert family, It only runs in the farm's quiet period mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky.

The malt used to make whisky is from the barley, grown in our South fields. It is the variety Optic, a variety that went on to become the mainstay for the Scotch whisky industry for several years.

Of the twenty casks that went into this bottling nineteen are first fill ex bourbon barrels and one is from an ex-PX cask. Distilled in June, July or August 2009. They were matured in the lower level of warehouse 2 before being bottled in December 2024 at the traditional Fife strength.
